French Toast

The perfect option for breakfast or brunch we love a good french toast recipe! Here are two of our favourites...

1.BANANA, PEPITA & CRANBERRY FRENCH TOAST

Makes 2 sandwiches

2 eggs

50mls milk

1 tsp cinnamon

2 tablespoons butter

50gms mascarpone (you can also use ricotta)

2 slices of JP’s sourdough

50gms pepita’s

50gms cranberries

2 small bananas, roughly sliced

zest of one lemon

Combine milk, eggs and cinnamon in a flat-bottomed bowl large enough to hold a sandwich and set aside. Immerse slices of bread in the egg mixture and allow to soak up thoroughly.

Meanwhile heat butter in a heavy-based pan and cook the sourdough until golden and crunchy on the outside. Place on a serving plate and top with mascarpone then bananas, pepita’s and cranberries. Finish with lemon zest. Serve immediately. Cinnamon French Toast.

 

2. CINNAMON FRENCH TOAST WITH LEMON CURD, RICOTTA AND SHAVED COCONUT

Makes 2 serves

2 eggs

50mls milk

1 tbs cinnamon

4 slices sourdough

1 tbs butter

100gm ricotta

1 jar JP’s lemon curd

150gms ricotta, crumbled

zest of one lemon

Combine milk eggs and cinnamon in a bowl with a flat bottom large enough to hold a sandwich and set aside.

Meanwhile heat butter in a heavy-based pan and cook the sourdough until golden and crunchy on the outside. Place on serving plate and top with generous dollops of lemon curd, crumbled ricotta, lemon zest and coconut. Drizzle with honey and serve immediately.
