Corn & Black Bean Salsa

The combination of sweet corn, hearty black beans, and zesty lime juice creates a delicious accompaniment to any dish. Whether you're hosting a party or simply looking for a nutritious snack, this corn and black bean salsa is a crowd-pleaser.


Serves 4 as a topping.


275g Black Beans, drained & rinsed

1 Corn Cob, husk removed

1/3 Cup Red Onion, chopped

1 Red Capsicum, chopped

3 Tbs Green Shallot, chopped

1/4 Cup Coriander, chopped

2 Limes, juiced

1/4 Cup Olive Oil

1/2 Tsp Oregano, dried

1/2 Tsp Smoked Paprika, ground





1. Toss black beans, corn, red onion, red pepper, shallots and coriander in a large bowl.

2. Whisk lime juice, olive oil, dried oregano, smoked paprika, salt and pepper in a bowl until well combined.

3. Pour dressing over salsa and mix thoroughly.

4. Adjust seasoning if necessary and serve.
